Kimchi, Bacon & Fulvi Pecorino Romano Biscuits


Homemade biscuits, the perfect start to a lazy Sunday morning. I'm still in my jammies. It feels good to have nothing planned.

I wasn't in the mood to cook all week. After feasting and being served in San Francisco, my routine had completely gone out the window. So I had to get my hands dirty and make something today.

I love savory biscuits. And I had thought of adding my favorite Korean staple kimchi to a biscuit recipe for a couple of months now. The combination of crispy bacon bits, Fulvi Pecorino Romano cheese and bite size kimchi was quite tasty. It reminds me of the new Italian Four Cheese Cheezits! I could eat a whole box in one sitting. I'm kidding. But I did devour a couple of these appetizing biscuits.

Ingredients
Adpated from the Mini Cheddar & Scallion Biscuits
3 Cups All Purpose Flour
2-1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 tsp Garlic Powder
1/2 Cup Cold Butter
1 Cup Fulvi Pecorino Romano Cheese (you could use cheddar or your favorite cheese)
6 Slices of Bacon, Chopped
3/4 Cup Diced Kimchi (squeezed of its juices)
2 Cups Grass Fed Buttermilk (shake well, I just realized I didn't shake my buttermilk enough, doh)

Directions
1. Preheat oven to 425º. A) Sift the flour, baking powder & soda, salt and garlic powder together and using a pastry cutter or two knives cut butter until only bits are visible. Add the Fulvi Pecorino Romano Cheese. Mix well. B) I baked my bacon in my convection oven lined with parchment paper at 375º until crispy, chop into bite size pieces and add to the mixture. C) Add the buttermilk. Mix well. D) Squeeze the kimchi of its juices, chop and add to the mixture and mix well until a dough forms.


2. On a lightly floured surface place the dough and pat and form the dough to about 2 inch thickness. Add more flour if your dough seems a bit wet. Using a floured biscuit cutter cut the dough and place on lined baking sheet and bake for about 15-20 minutes or until biscuits appear golden.


I think kimchi pairs well with pretty much everything. Ok, not everything but it worked well with these biscuits.

Toddler and hubby approved! Enjoy.

    I've heard about how well kimchi and cheese go together and I love kimchi. I never stop being amazed at your cooking creativity. This recipe sounds delicious.

    I love savory biscuits - they're like a meal in your hand. I'm definitely going to keep these on hand for our next lazy Sunday - this week we went with sweet (apple cinnamon pancakes) but next week, I'm thinking bacon!

    I saw Ina Garten make some cheddar herb biscuits this weekend and I became obsessed with them. I don't blame you for staying in your PJs and making these instead. Love the combo of flavors. If I lived closer to you I would have found a reason to pop in and nab some of these. :-)

    Bacon, cheese, biscuits? YUM! I have been a biscuit making diva since I married my ol southern boy! Yeah definitely buying that jar of kimchi at the commissary that's been saying 'buy me!' since I've been reading your blog! See, now you have food screaming at me!!! I know what I am asking Santa for Christmas! Glad the family enjoyed them as well. Nothing like a fluffy biscuit in the morning....noon or night!

    Lisa, this intrigues me. I'd love to try it! I totally get you on falling out of routine at times. After all the travel over the summer it was sooo hard to get back on track and into the kitchen. But I did, and it took a while but i eventually got back to my routine :)
