Breakfast of Champions


Is it weird that I like to feed my family lentils and fried eggs in the morning? Because its the most delicious and savory breakfast idea. Ever. Not sure if others have done this but its very filling and my son devours a plate every time I make this.

This lentil dish is the same lentil recipe used in the Salmon with Du Puy Lentils. Except I used regular green lentils.

We ate this for breakfast this morning. I normally make a batch of lentils and keep in the fridge. I basically added fried eggs (cut with a biscuit cutter, just to make it look nicer) and topped with a pancetta slice. Yep, that's it!

Simple. Delicious. Healthy. Filling. A great start to the day! Enjoy.

    This sounds like a great breakfast to start off the day. Just the thing to fill you up and keep you going with lots of energy to spare.

    This is indeed a wonderful start to the day! I have a huge bag of lentils at home but my husband doesn't really like them so maybe i'll make a batch of them, and eat it for breakfast like you do. :)

    I think this is a great idea, what a high protein, filling breakfast! I used to eat beans and eggs for breakfast a lot, I don't know why I stopped but I think I like the idea of the lentils better!
