Tonight's dinner post is a special one. I was asked by a fellow mommy blogger, Mama Hen to be a part of her cute little Nestwork! A mommy network where we can share idea's and stories. How kind of her to invite me and feature my recipes and blog. Thank you so much for including me, I truly appreciate it.
Because there are moms with more than one child, moms who work, and moms who need really simple and easy dinner ideas, I decided to showcase a simple but delicious baked lemon chicken. I recently realized what I may consider easy may not be the same for some.
My blog is dedicated to my journey as a new mommy learning how to bake and cook. And along the way I'll be sharing my trials and tribulations of my culinary adventures as well as random stories, my love for photography (by the way I have no special training and still learning everyday) and issues related to raising my wonderful son who is often my sous chef. I hope that my blog inspires others to cook and bake with their children and overcome fears in the kitchen.
Ingredients
1 Whole Roasting Chicken
2 Lemons washed and quartered
1-2 Yellow Onions, Sliced
2 tbsp Unsalted Melted Butter
Extra Virgin Olive Oil
Salt & Pepper
Directions
1. Preheat your oven to 425º degrees. Slice your onion and toss with olive oil and evenly spread out on the bottom of your roasting pan.
2. Take the giblets out of the chicken and sprinkle salt and pepper inside the cavity of the chicken. Place the quartered lemons inside the cavity of the chicken as well and place it on top of the onions.
3. Pat the outside of the chicken dry with a paper towel and brush the melted butter all over the chicken. Sprinkle salt and pepper. Roast for 1-1/2 hours or until juices run clear when you cut between the leg and the thigh.
Simple, delicious and ready to serve! You can serve with your favorite side dish. We had ours with the Mock Garlic Mashed Potatoes without the Potatoes. Enjoy!

Delicious looking dish with simple ingredients. I've never tried with lemons stuffed inside the chicken. I'm gonna give it a try.

Yay Lisa!! I was so excited to go to Mama's Little Nestwork and see you featured! As for this recipe, we make our roast chicken like this as well. I sometimes will mix it up by swapping out half the lemon for oranges. It's absolutely delicious. Mmmm... maybe I'll be making it this weekend! Congrats again!

Since I don't eat beef, I do eat chicken 2 or 3 times a week, I am always looking for new ways to tease my tastebuds....your chicken looks so very very good!! I love cooking whole chicken they are so juicy and tender.
